Power Bowls

Combine the following:

  • 4 cup cooked quinoa
  • 1 small sweet potato
  • ½ cup canned black beans, rinsed
  • 1 cup greens (spinach, kale, collard greens, beet greens, etc.)
  • 1 cup roasted veggies (broccoli, asparagus, green beans, peppers, etc.)

Optional: Top with salsa for added flavor

-Food prep ahead of time by cooking large portions of quinoa as directed, sweet potatoes in a crock pot, and roasted veggies in the oven for the week ahead.  This is a great power packed meal that can be thrown together any night of the week!

Banana Ice Cream
